This chicken with coconut crust is a very tasty and easy recipe to make. Chicken is the easiest to prepare from all the meat kinds, it cooks fast and you can mix it with a lot of spices. I make chicken dishes often, so I tried to make it a bit different. I love the flavor of cocos and I find a recipe that combines this 2.


  • 1 pumpkin;
  • 1 large eggplant;
  • 1 tablespoon rapeseed oil;
  • 3 tablespoons coconut flakes;
  • 4 tablespoons breadcrumbs;
  • 4 chicken breast without skin;
  • 1 egg;
  • 300 g cherry tomatoes;
  • 2 tablespoons red curry paste;
  • 1 handful cilantro leaves;
  • salt;
  • pepper;
  • slices of lime, for serving.


  1. Peel the pumpkin and remove the seeds, then cut it in cubes. Cut in cubes the eggplant too.
  2. Season the vegetables and add some oil to them.
  3. Mix a little to make sure every cube is seasoned and covered with oil.
  4. Preheat oven to 200ºC.
  5. In a large oven tray place in a single layer the vegetables.
  6. Bake for 30 minutes, turning the vegetables on the other side at halftime.
  7. Mix in a bowl the breadcrumbs and the coconut flakes with a pinch of salt.
  8. Whisk the egg in another bowl and pass the chicken through it.
  9. Then press it in the bowl with the coconut and the breadcrumbs, on both sides.
  10. Add the cherry tomatoes and the curry paste over the vegetables in the tray. Mix it all well together.
  11. Put the chicken breasts on top, and bake everything in the oven for another 25 minutes.
  12. Bake until the meat is tender, and you can fully put your fork in it.
  13. During this time, shake the pan once or twice, to mix the vegetable and the meat together.
