Easy Stuffed Peppers Recipe

This dish can be made with all kinds of meat, or you can make a vegetarian adaptation. So versatile and so good. In fact you can fill a lot of other vegetables with some meat stuffing. I made stuffed kohlrabi, mushrooms, potatoes, so you can adapt this recipe to your taste. I will make today easy stuffed peppers recipe with meat and rice.

Ingredients

  • 1.4 kg minced meat(turkey and chicken mix);
  • 12-14 large bell peppers;
  • 2 carrots;
  • 2 onions;
  • a small cup of rice;
  • a bunch of parsley;
  • a bunch of dill;
  • 3-4 tablespoons of tomato juice;
  • few peppercorns;
  • salt;
  • pepper;
  • vegetable oil.

Preparation

  1. Wash the peppers and with a knife remove their top. Clean the peppers thoroughly from all the seeds, and allow to drain.
  2. Meanwhile put the rice in water with a pinch of salt to boil, but not entirely. The rice should be half cooked.
  3. Now make the stuffing for the peppers. It is very simple.
  4. Chop and cut all the vegetables. Cut the onion and grate the carrots, and cut finely the dill and the parsley.
  5. Add the onions and carrots on top on the minced meat and mix it together.
  6. To the meat mix add the rice and the cut greenery.
  7. Mix well everything and season with salt and pepper. And the stuffing is done.
  8. Now you can fill the peppers.
  9. When you are done, put them in a pot, or pyrex oven safe dish, or a deep oven tray, next to each other.
  10. Add water until the level reaches the peppers, some tomato juice and a few peppercorns, and vegetable oil.
  11. Put the stuffed pepper for 1 and a half hours in the oven at 180°C.
