Ingredients

  • 4 kg of strawberry;
  • 3 kg sugar;
  • a pod of vanilla;
  • 4 smaller jars;
  • juice of 2 lemons.

Preparation

  1. Wash well the strawberries then cut them.
  2. Put all the strawberries in a larg pot then put the vanilla pod(cut lengthwise). Put on top the sugar. You can put more or less sugar, but usually you put 1 kg of sugar to 1 kg strawberries. I put less because my strawberries are very sweet.
  3. Mix everything together, but be careful not to break the strawberries. You just have to distribute the sugar.
  4. Put the lid on the pot and leave it over night in the fridge so the syrup can form.
  5. The next day you will see that so much syrup has formed.
  6. You put the strawberries to boil and add the lemon juice.
  7. Mix a little the composition, then let the strawberries to boil and the foam to form above.
  8. When the mix is boiling you will need to remove the foam.
  9. Continue to boil and remove the foam if necessary until the composition is reduced to half.
  10. You will boil it for about to hours. It will be much darker, shiny and thicker. It should not be very thick because it will cool down and will thicken even more.
  11. Turn off the heat and let the jam cool for about 15 minutes.
  12. Put the hot jam in sterilized jars. Place the lid and close it well, as well as you can.
  13. Fill all the jars and put them upside down to form the void.
