Kohlrabi Cream Soup Recipe

Ingredients

  • 4 medium kohlrabies;
  • 2 medium potatoes;
  • 1 big leek(use just the white and light green parts of it);
  • 1 l chicken stock(substitute with vegetable broth or water if you don’t have chicken stock);
  • 1 tablespoon olive oil;
  • 25 g butter;
  • 150 g cooking cream;
  • 1 bay leaf;
  • a little nutmeg;
  • salt;
  • pepper;
  • some bacon or croutons and some greenery for serving.

Preparation

  1. Peel the kohlrabies and cut them in cubes.
  2. Clean the leek and cut into slivers.
  3. Heat the oil in a pot and add the butter too.
  4. When the butter is melted add the leeks to it with a pinch of salt.
  5. Saute the leeks until softens slightly. For about 3-4 minutes.
  6. Then add the cubes of kohlrabi and continue to cook together everything, stirring constantly, for 4-5 minutes.
  7. After this time add the peeled and cut potatoes, in cubes, the chicken broth and bay leaf.
  8. Simmer the soup until both the potatoes and kohlrabi cubes are softened well (about 15-20 minutes).
  9. After is done, remove the bay leaf and blend the soup with a blender or food processor.
  10. Put a fine sieve over a clean saucepan and bring the soup through it for a smoother texture.
  11. Cook it further for a few minutes, until you add the cooking cream, a bit of nutmeg, salt and pepper.
