You just gather all the ingredients and start making the pasta. I love Italian cousin, and I bet you love it too. Pasta and pizza, olive oil, tomatoes, garlic, whole grains. Just the best. Everybody loves a good spaghetti recipe, or a tasty pizza. So this penne alla Norma will be your favorite too.

Ingredients

  • 250g penne rigate (Barilla No. 72);
  • 2 eggplants;
  • 500 g tomatoes;
  • 3 garlic gloves;
  • 1 onion;
  • olive oil;
  • green basil;
  • 150 g ricotta(or you can use mozzarella);
  • salt;
  • pepper.

See, just a few ingredients and you will make a great dish. You can’t go wrong with Italian food.

Preparation

  1. Slice the eggplants, add salt to them and let the eggplants drain.
  2. Fry the eggplants in olive oil next with 1 sliced garlic glove .
  3. Put the eggplants on a paper towel to get rid of excess oil.
  4. Chop the onion and the garlic and saute them in olive oil until they get translucent.
  5. Cut and peel the tomatoes and add them to the onions.
  6. Boil down to get a nice sauce, for about 10 minutes.
  7. Season with salt and pepper.
  8. Add the eggplants and basil leaves.
  9. Cook the pasta as directed on the package and add to the sauce. I put the pasta on to boil when I add the tomatoes to the onions, in 10 minutes it was ready.
  10. Mix everything together, and season with salt, pepper, or basil if needed.
  11. Add on top of the penne when you serve it some grated ricotta, or mozzarella.
