Tasty Chicken Stew Recipe

So in my pantry I found some sweet potatoes and spinach. Of course I will add some meat to this recipe, so I will make a chicken stew with sweet potatoes and spinach. Now as I said you can make a stew with your favorite ingredients or with what you have. But if you want to make this tasty chicken stew recipe, follow me.

Ingredients

  • 1 tablespoon sunflower oil;
  • 1 onion;
  • 450 g skinless and boneless chicken thighs;
  • 165 g curry paste;
  • 2 garlic gloves;
  • 500 g sweet potato;
  • 400 g canned tomatoes;
  • 100 g baby spinach;
  • salt;
  • pepper;
  • basmati rice, to serve if you like.

So I add more ingredients than just a few sweet potatoes and spinach, but this is so basic stew that all I needed I had in my kitchen. Let’s start this tasty chicken stew recipe.

Preparation

  1. So as always we will chop and cut everything. First chop the onions and cut into small pieces the chicken thighs.
  2. Heat the oil in a pot and add the chopped onions and cook over low heat for about 5 minutes.
  3. Turn the heat a bit higher and add the chicken and browned them.
  4. Add the curry paste and the crushed garlic in the pot and cook it 2 minutes before adding 100 ml water.
  5. Cut the potatoes and the tomatoes(if you have whole canned) and add them to the pot too.
  6. Let it boil for about 20-30 minutes, until the chicken is cooked and the potatoes are soft. If it appears dry, add a little water.
  7. Taking the pot of the heat, season it to your taste and add the spinach.
  8. Stir until the spinach gets soft.
